In Yucatecan cuisine, traditional Mayan ingredients fuse with European, Caribbean, and other Mexican influences, leading to a unique gastronomic melange. Yucatan’s food is notably distinct from what many consider “Mexican cuisine.” Staples like axiote (achiote), chaya, and naranja agria are specific to the region and are responsible for the unique flavors found in our dishes.
Cochinita Pibil, the king of Yucatan foods, is one such delicacy. This beloved dish is made with marinated cochinita (suckling pig), wrapped in banana leaves and slow-roasted underground in an oven called a pib. The result is a tender, flavorful dish that’s a must-try for meat lovers. Alternatively, for those who prefer poultry, we offer Pollo Pibil, prepared in the same traditional way but using chicken instead of pork.
For our vegetarian patrons, we serve a spin on the Mexican classic “Al Pastor”. By replacing the protein with cauliflower, what you are left with is an incredibly flavorful, yet guilt free entree that would satisfy even the meat lovers of the world.
We also invite you to indulge in our selection of traditional beverages from Yucatan. We hand make our “Horchata” which is a sweet rice drink. Another local favorite is Agua de Tamarindo, made with the tart, tangy, and sweet tamarind fruit. These beverages add another dimension to the Yucatan dining experience, complementing the array of flavors found in our dishes.
